If you're anything like me, you're probably really broke and wanting to eat healthily. I have figured out how to achieve this on a tight budget, and I hope I can inspire you to do the same!

PASTRY FREE SHEPHERDS PIE

Okay, so how bloody great is PIE!!! I love PIE. PIE PIE PIEEEEE. 

AND.. How much better is something if it's actually got no baddies in it?! Healthy pie? Yeah I went there.
I can't wait for you to try this. It's like a warm hug from mum.

DELISH. Try not to smash it all in one sitting. I dare you.

 

MEAT / VEGAN OPTIONS

MEAT

1 brown onion (diced)

6 creme potatoes (4 peeled and chopped into quarters, 2 sliced thinly)

1 handful of cauliflower heads (chopped into small pieces)

1 handful of chopped kale & baby spinach

2 tablespoons olive oil

140g tomato paste

350 ml passata tomato sauce

1 tablespoon of curry powder

1 teaspoon of cinnamon

1/4 cup of worcestershire sauce

1 teaspoon of honey

1 tablespoon bbq sauce

500g grass fed organic beef mince

1 beef or vegetable stock cube

1 teaspoon of gf flour

sea salt & pepper

1 tablespoon of dairy free butter

100g vegan cheese

 

 

Preheat oven to 190c.

Place 1 tablespoon of olive oil in a fry pan on medium heat. Place diced onion in fry pan, brown off. Add a stock cube, curry powder, cinnamon, worcestershire sauce, bbq sauce, honey with onion. Add beef & brown off. Add tomato paste, passata sauce & flour. Mix thoroughly. Add salt & pepper to taste.

In a saucepan, place boiling water. Add chopped potatoes & cauliflower heads. Boil until they are soft. Drain water. Mash or food process cauli & potatoes until you see a smooth consistency. Add vegan butter, half of the vegan cheese, salt & pepper. Further mix until very smooth.

Grease a baking dish with the other tablespoon of olive oil. Slice two creme potatoes thinly. Place around the bottom and the edges of the dish, so it makes the 'pastry' base.

Place beef filling into your baking dish, ensuring it’s spread evenly. Sprinkle the rest of the vegan cheese on top, add a dash of salt & pepper. 

Spread mash over the top of the filling. Flatten with a fork ensuring every area is covered. Sprinkle a little more salt & pepper.

Bake for roughly half an hour (just keep an eye on it). 

 

VEGAN

1 tablespoon bbq sauce

1 cup of white quinoa

1 vegetable stock cube

1 teaspoon of gf flour

sea salt & pepper

1 tablespoon of dairy free butter

100g vegan cheese

 

VEGAN OPTION

In a saucepan, place 1 part quinoa to 2 parts water. Bring to the boil, stirring consistently. Once at boiling point, reduce to a simmer. Remember to continually stir.

Once that’s done, remove from heat.

Place 1 tablespoon of olive oil in a fry pan on medium heat. Place chopped onion in fry pan, brown off. Add stock cube, curry powder, cinnamon, worcestershire sauce, bbq sauce, maple syrup. Brown off. Stir through cooked quinoa. Add tomato paste, passata sauce & flour. Mix thoroughly. Add salt & pepper to taste.

In a separate saucepan, bring water to the boil.

 Add chopped potatoes & cauliflower heads. Boil until they are soft. Drain water. Mash or food process cauli & potatoes until you see a smooth consistency. Add vegan butter, half of the vegan cheese, salt & pepper. Further mix until very smooth.
