Medjool Date GF Scones
OH. MY. GOD!
One of Elise's biggest life goals has been to come up with a GF, DF alternative recipes for scones - so when we pulled these puppies out of the oven, our anticipation was at an all time high.
To our surprise, they were INCREDIBLE! We were both screaming, Elise was nearly crying - emotions were high. This is one of her biggest achievements to date (haha, get it)
You have to give these a go!
What you will need:
1 cup gf all purpose plain flour
1 cup gf self raising flour
1 cup almond meal
1 tablespoon gf baking powder
1 cup coconut sugar
4 heaped tablespoons of coconut oil
1/4 cup almond milk
8 medjool dates
Okay, lets get into it:
Preheat oven to 200c.
Combine all dry ingredients together.
Rub the coconut oil through the dry mixture until crumb like.
In a separate bowl whisk two eggs, add to dry mixture.
Mix well. Add almond milk and mix. After mixing for a bit, the ingredients should turn to a dough. Knead in hands for a while to ensure everything is well combined.
Chop medjool dates, and combine through dough.
Roll small circular pieces in hands, and place on tray.
Line a baking tray with baking paper.
Place the balls of dough in the oven for approx 15 - 20 minutes.
Check their progress by sticking a knife into the centre, if it comes out clean, bob's your uncle - she's ready.
Bring out of the over and make sure you let them cool a little before going to town.
