If you're anything like me, you're probably really broke and wanting to eat healthily. I have figured out how to achieve this on a tight budget, and I hope I can inspire you to do the same!

Vegan Cacao & Maple Pancakes

If you're a vegan, and you love chocolate - you'll basically never have to eat anything else again. Even if you're not a vegan, these pancakes are friggin delicious. We sat on the balcony on a Sunday morning when we first came up with this recipe and absolutely demolished them.
You need these in your life!!!

This is what you'll need:
1 cup all purpose gf plain flour
1/2 cup spelt flour
1 tsp baking powder
1/2 cup coconut sugar
3 heaped tablespoons cacao powder
2 cups almond milk
3 tablespoons organic maple syrup
2 tablespoons of chia eggs (see recipe)
2 teaspoons coconut oil

Let's get down to business:
Combine all dry ingredients in a bowl.
In a separate bowl add chia eggs, almond milk and maple syrup.
Mix thoroughly.
Once combined, add to dry ingredients and mix well.
Add coconut oil to a fry pan on high heat.
Add the batter to the fry pan (size of choice). 
Flip once bubbles are coming through the batter.
Top with whatever you have.
We topped it with fresh berries, Poornola and maple syrup.
