Super Simple Salad
When you feel like a something healthy but you're studying, busy as hell or just can't be bloody bothered - this recipe has you covered.
I came up with this little throw together while I was building this website. I'd been typing recipes all day and started to feel hungry/needed a quick break.
There was sweet FA in my pantry/fridge, so I got creative and boom!

We NEVER follow recipes - like ever. A lot of the time we can't afford to go out and buy an extensive list of ingredients just to make one meal.
Okay, this won't take long - you ready?
An idea of what to use:
1 - 2 handfuls of rocket (or whatever lettuce/green you have)
1 - 2 scoops of caramelised veggies (I used pear & brussel sprouts because it's literally all I had)
1/4 cup of balsamic vinegar
2 tablespoons of olive oil
2 heaped tablespoons of coconut sugar
Salt & pepper
A drizzle of tahini
Literally all you have to do:
Caramelise your veggies in a pan
I just added olive oil, coconut sugar & balsamic vinegar, salt & pepper to the pan with some sliced pear & brussel sprouts (should take 5 minutes)
Put the rocket into a bowl
Add the caramelised veggies on top
Drizzle with tahini
Super. Simple. Salad. Boom.
