Sahh Simple Asian Greens
We are absolutely OBSESSED with Asian Greens at the moment.
It's seriously one of the most simple and delicious meals ever!
One thing we have learnt when experimenting with this dish is that there are three elements - the sauce, the greens and the rice (if you want rice, if not then only two...which is so easy!).
Once you know what goes with what, you can literally get creative and know you're going to nail it every time!
When it comes to sauces, generally the flavours we use are:
- tamari (soy sauce alternative),
- soy sauce,
- sweet chilli sauce,
- sesame oil
- oyster & fish sauce (optional),
- lemon (just to name a few).
Once you have a good sauce, it's all about filling that mother with a shit tonne of greens/veggies.
- bok choy or pak choy
- baby kale
- green beans
- snow peas
If you think that greens won't be enough for you, we recommend a side of
- brown rice
- basmati rice
- rice noodles
- OR rolling them up in rice paper rolls!
Here's one variation:
Firstly, if you're going to have rice then make sure you put that on first!
If not, go to the next step...
On high heat, add sesame oil to a pan.
Next add in your veggies. Our favourite combo right now is broccoli, bok choy, green beans, snow peas, zucchini and cashews.
You only need the cook them for a little but until they're just cooked (the greener and fresher the better!)
Choose a few ingredients from the sauce list above to make a sauce and then add it to the pan.
(We recommend using one tablespoon each of 5 of the sauce ingredients and adding a little water to mix)
Add all of that goodness into a bowl and smash it! Soooo good!
We highly recommend going back for seconds!
Another combo you could try is this:
1 cup water
2 sachets miso paste
1 teaspoon of sesame oil
2 tablespoons of tamari
1 tablespoon sweet chilli sauce
1 handful of peanuts (garnish)
Fresh ginger (grated)
2 cloves of garlic
1 handful of parsley
1 zucchini (diced)
1/2 broccoli (cut finely)
5 shiitake mushrooms (sliced)
1 handful of bok choy (chopped finely)
In a saucepan on high heat, boil greens with the miso sachets.
In a fry pan, fry up ginger, garlic, parsley, lemon, mushrooms & all sauces.
Once veggies are boiled, pour contents into a bowl.
Mix through pan fried ingredients. Sprinkle with fresh peanuts & parsley.
Serve with brown rice or rice noodles if you want some extra carbs.
It's only 9am and now after writing this we're hungry! Story of our lives!
