Easy Peesy Spaghetti
This is a meal that could feed an army!
We love carbs here at PGP, and everything feels healthier when there's greens involved.
Super simple, super delicious, just give it a crack and you'll see what we're on about.
*Read in Italian accent*
Here'za whata you'lla needa:
1 packet of gluten free spaghetti
4 garlic cloves
1 brown onion
1 tin of cannelloni beans (rinsed well)
1 handful of green beans
2 handfuls of baby spinach
1/2 broccoli (chopped finely)
2 tablespoons olive oil
1 handful of fresh or dried oregano
1 bunch of fresh basil
1 cup of red wine
1 jar of pasta sauce of choice (750ml)
Salt and pepper
Let's get cooking mate:
In a large saucepan, bring water to the boil. Snap spaghetti sticks in half and place in saucepan. Dice onions and garlic cloves.
In a fry pan, place olive oil on a medium to high heat.
Add garlic and onion. Once browned off, add greens, cannellini beans, herbs and red wine to fry pan.
Then empty pasta sauce contents into the fry pan and mix.
Fill the pasta sauce jar half full with water and shake, then tip the remaining contents into the fry pan.
Bring to boil, then simmer.
Add salt and pepper to taste.
Once spaghetti is cooked, drain.
Add to a bowl with a dash of olive oil, and salt and combine.
Once the sauce is cooked, take off heat and mix through the spaghetti.
Season with salt and pepper
