Apple & Cinnamon Muffins
If you haven't noticed already...WE LURVE MERRRRFFINS! The beautiful thing about these little puffs of deliciousness is that the base is generally the same. They are so versatile and take next to no effort. Apple & cinnamon is always a combo. We dare you to not eat 5 of these in a row like we did! Okay, we're sure you're drooling, let's do this...
You're gonna need:
2 green apples (peeled & chopped into small cubes)
4 teaspoons of cinnamon
1 apple (to garnish)
1 cup of coconut sugar
1 cup of almond milk
1.5 cups of gluten free self raising flour
1 cup of coconut flour
1 tsp of gluten free baking powder
2 tablespoons of rice malt syrup
Okay, here goes:
Preheat oven to 200 degrees (fan bake)
Grease a 12 tin muffin tray with coconut oil
Mix all dry ingredients in a bowl
In a seperate bowl, whisk the wet ingredients
Add all ingredients into the same bowl and mix well
Stir through the cubed apples
Add the batter evenly to the 12 tin muffin tray
Slice finely the apple you put aside to garnish
Put two slices on top of each (see picture above)
Sprinkle some coconut sugar on top
Put in the oven and bake for roughly 20 minutes
Stick a knife in to each one and if it comes out clean, they're done!
Pull out of the oven and let them cool down
*Try to let them cool - we have burnt our mouths sooo many times eating them while they were still hot haha
