APPLE & PASSIONFRUIT CRUMBLE
If you like frosty fruits (icy poles), well let me tell you, this recipe is for you!
Think hot delicious sweet & tangy, with some crunch. Pretty much onto a winner here I'd say! By the way of few of my friends dug into this dish, I'd say you'd be silly not to try it!
Please, please, please note that this is (yet again) on a winged effort, and the ingredients are what I had in the pantry at the time. Get creative and add or use whatever you want! Save $$.
What you'll need:
1/2 a pot of boiling water
12 green apples (small - or 6 bigger ones) - peeled & sliced into quarters
1 tablespoon of coconut sugar
3/4 cup of desiccated coconut
1 cup of coconut flakes
1/3 cup of chia seeds
1 cup of quinoa flakes (substitute for oats)
1 1/2 cups of almond meal / finely chopped almonds
4 tablespoons of coconut sugar
3 tablespoons of rice malt syrup
1 tablespoon of honey
1 heaped teaspoon of coconut oil
1 teaspoon of dairy free butter
1 teaspoon of rice malt syrup
What to do:
Preheat oven to 180c (fanforced). Line a baking tray with baking paper. Set aside.
Grease a baking dish with dairy free butter. Set aside.
Bring water to the boil. Add sliced apples to the pot with a tablespoon of coconut sugar. Boil until apples are soft. Remove from heat and drain. Place in a bowl and add passionfruit & a tablespoon of coconut sugar. Mix.
In a separate bowl add desiccated coconut, coconut flakes, chia seeds, quinoa flakes, almond meal, remaining coconut sugar. Mix until well combined. Add honey & 2 tablespoons of rice malt syrup. Mix until all dry ingredients are wet. Rub coconut oil throughout your crumble mix until it is spread throughout evenly.
Place crumble in your baking tray. Bake for roughly 20 minutes. Just keep an eye on it, whether it needs a stir throughout the cooking process, preventing burning. MUST NOT BURN. You want it to be semi undercooked, as it will be going back in the oven very soon.
Remove from the oven, set aside to cool.
Spread just under half of the crumble mix into your baking dish. Flatten down.
Place apple & passionfruit mix into the baking dish on top of the first layer of crumble, ensuring it is evenly proportioned.
Layer it yet again with crumble. Drizzle some extra rice malt syrup on top, and just lightly mix through with your hands. Bake for roughly 15 mins. I'm going to be honest, I never keep a track of time, I'm just guessing. Just use your eyes... you'll know when she's good to go.
Serve as is or with dairy free ice cream.
P.s there's a more than likely chance that you'll have leftovers. Store this in your pantry and use it as granola. YAS.
