If you're anything like me, you're probably really broke and wanting to eat healthily. I have figured out how to achieve this on a tight budget, and I hope I can inspire you to do the same!
Let's break the myth that
healthy = expensive!

Mediterranean Zucchini Pasta

If there is one utensil we highly suggest you get your hands on for your kitchen, it's the one....the only.... SPIRALIZER!!! This puppy will create things you didn't even know existed. Technically speaking, you could mosey on down to your local kitchen shop, and buy one of these. But that's what silly people do (us included). Smart people (all of you), are going to head to eBay, and bargain the shit out of a spiralizer. SAVE YOUR PENNIES!

These are the ingredients you'll need:
2 zucchinis
8 artichokes
Handful of semi dried tomatoes
Handful of snow peas
12 olives
1 lemon
2 tablespoon of balsamic vinegar
2 cup of wild rocket
150g goats cheese (cashew cheese as a vegan option)

This is what you'll do with them:
Spiralize the zucchinis & set aside. 
In a pan on a medium heat, add tomatoes, olives, artichokes & snow peas.
Squeeze the lemon, add the balsamic vinegar and mix.
Chuck in a 1 cup of the wild rocket, and mix through half the goats cheese. 
Combine spiralized zucchini with the rest of the ingredients.
Garnish with fresh goats cheese, lemon & fresh rocket, then thank us later.
