If you're anything like me, you're probably really broke and wanting to eat healthily. I have figured out how to achieve this on a tight budget, and I hope I can inspire you to do the same!

Stuff It...Lets Have Mexican!

Mexican spiced beans, stuffed in purple sweet potatoes, topped with guac!!
This bad boy will be a hit in any home (unless you hate spicy things, then we suggest you probably move out.) This really gets your tastebuds dancing, and your tummy very full.
This recipe made 5 meals, including a well fed boy, so technically 7 meals. Haha.

Here is the list of things you'll need:
2-4 limes
4 avocados
1 bunch coriander (cilantro)
3 large purple sweet potatoes
2 garlic cloves
1 red onion
4-5 tomatoes
1/2 a bunch of butter lettuce
1 tin of diced tomatoes
1 tin of beans (any is fine)
1 sachet of burrito spice mix
1/2 a jar of 'Byron Bay Chilli Co' chilli & coconut sauce (any chilli & coconut sauce will be fine, but this is definitely the best!)

Here's what to do (there's a few steps to this one):
Place a large pot on the stove and boil water.
Preheat the oven to 200c fan bake.
Slice purple sweet potatoes into halves (width) and place in boiling water pot. 
Drain water from pot once sweet potatoes are 3/4 cooked.
Cut lengthways and scoop out the inside of the potato so they look like little purple boats.
Place sweet potato boats in the oven, and leave in there until cooked. 
Place excess sweet potato into a bowl and smash it into a mash with a fork. 

In a fry pan on high heat, place 1/2 red onion (finely chopped), garlic cloves (finely chopped), a tablespoon of olive oil, burrito spice mix, chilli sauce, beans and tinned tomatoes.
Mix well. Add salt and pepper.

You can also add extra spices ie cumin, cinnamon, paprika, whatever you want! It's all about playing around until you're happy with the taste!

In a bowl squash avocados.
Add lime, 1/2 bunch of coriander, salt & pepper to taste. Set aside.

Chop the tomatoes & red onion into small cubes.
Place in a bowl & mix through the leftover coriander.
Add salt and pepper if desired.

Once all these elements are done, you're ready to construct.

I like to place the mash on the plate with the butter lettuce.
Place the sweet potato boat on top.
Fill with bean mix, tomato salad, and top with guac.
Garnish with coriander and lime.
Sit back and enjoy!
