Creamy Green Mish Mash Soup
The beautiful thing about this bowl of green goodness is that you can chuck in whatever greens you have, and we promise you it will taste delish.
Bulk, bulk, bulk. We love soup because you can make so friggin much, for nothing at all. Can I get an AMEN!
Get your ingredients ready:
2 handfuls of kale
2 potatoes (chopped into small cubes)
1 brown onion
2 garlic cloves
1 teaspoon turmeric
2 tablespoons cumin
2 teaspoons of mustard seeds (not the dry ones) lol
2 teaspoons of pink Himalayan sea salt
1 teaspoon of pepper
Here's what you gotta do:
In a fry pan, place onion, garlic, spices, mustard seeds, salt and pepper.
Fry until browned.
In a saucepan place all the other ingredients with water covering all the veggies.
Drain half the water content, and put the veggies and half the water content in a blender.
Add the onion and spice mix to the blender, with half a can of coconut cream.
Blend until well mixed & smooth.
Garnish with coconut cream and a fresh sprig of oregano.
