Tropical Chocolate Pancakes
We’re known here at Poor Girls to have the sweetest teeth in Byron. We love a sweet treat, especially when it comes to chocolatttteeeeeee ahhhhh. So basically this is a recipe to cure your sweet tooth, without feeling like a whale. Win-win in our eyes!
This is what you'll need:
2 cups GF plain all purpose flour
1 tablespoon of GF baking powder
½ cup cacao powder
½ cup coconut sugar
3 tablespoons rice malt syrup
2 eggs (vegan option see below)
1 ½ cups nut milk of choice
1 tablespoon coconut oil
When you've got your ingredients:
In a bowl combine flour, baking powder, coconut sugar & cacao powder.
In a separate bowl whisk the eggs, rice malt syrup & nut milk.
Combine both dry & wet ingredients into one bowl, and mix well, until the batter is smooth without lumps.
Heat a fry pan on high heat and add the coconut oil.
Let it heat, then scoop batter and place in the frypan (sizing depending on what you want- we usually use a cups worth of batter).
Once bubbles start to appear within the batter, it’s time to flip that puppy.
Garnish with whatever you have in the pantry/fridge.
Our go to is usually rice malt syrup, berries, coconut flakes, cacao nibs etc.
But literally you can put whatever you want on it!
